These quick and easy tortilla melts are a great lunch or snack idea for those of us who are short on time. Its all meltingly good; get creative with your own toppings!

1 Mis-En-Place: 1) Shred Montery Jack 2) Thinly slice Red Onion 3) Slice Jalapeno 4) Chop Cilantro

2 Shallow-fry GET FIT Roti in olive oil in a skillet, 45 seconds per side; transfer to a baking sheet.

3 Top with shredded monterey jack and thinly sliced red onion.

4 Bake at 350 degrees F until the cheese melts, about 3 minutes.

5 Top with sliced pickled jalapenos and cilantro.
