The ultimate Heart Healthy, Low Carb Omega-3 rich ceviche.
Prep time: 15 minutes | Cook time: 30 minutes
1 Mis-En-Place: 1) Dice, tilapia or sea bass fillets or other boneless white fish 2) Chop roma tomatoes 3) Peel, seed and dice cucumber 4) Dice onion 5) Chop cilantro & Thai chillies 6) Half, pit, peel, and thinly slice avocado
2 Put the tilapia in a medium bowl.
3 Pour the lime juice over the fish and mix gently.
4 Cover with plastic wrap and chill in the refrigerator until the fish is white throughout, about 20 to 30 minutes.
5 While fish is in the refrigerator, combine tomatoes, cucumber, onion, cilantro, and Serrano chile in a large bowl.
6 Remove fish from the refrigerator and drain off the lime juice, gently squeezing the fish with your hands.
7 Discard the lime juice. Gently combine the fish with the rest of the ingredients.
8 Season with salt and pepper, to taste.
9 Heat GET FIT rotis on an open gas flame, flipping once or twice to warm and soften, working towards slight burn marks on both sides; or warm GET FIT Rotis on both sides in a hot skillet.
10 Lay each GET FIT roti on a flat work surface, place a large spoonful of ceviche in the center; top with avocado slices and a sprinkle with feta cheese.
11 Serve immediately with the lime wedges and mint chutney.
