Quesadillas Rancheros

Inspiration:

A Great Mexican style breakfast with Tortillas, Eggs, Salsa Verde....quesadilla style! A very simple easy to make quesadilla, just place the cheese between two tortillas and broil - your breakfast is ready. 

Everything is Heaven with Melted Cheese!

Spice it up with Mexican spices which adds tangy, smoky flavor to the quesadillas—each topped off, of course, with a crispy fried egg. A great tasty, nutritious and fulfilling breakfast for a busy weekday. 

Prep time: 5 minutes | Cook time: 20 minutes

Method

1 Mis-En-Place: 1) Slice Scallions 2) Grate Cheddar Cheese

2 Brush the tortillas on one side with the oil. Dividing evenly, form sandwiches with the tortillas (oiled-sides out) and the Cheddar.

3 In batches, broil the sandwiches on 2 foil-lined rimmed baking sheets until the tortillas are crisp and the cheese has melted, 1 to 2 minutes per side

4 Cut the each broiled tortillas into 4 pieces.

5 Spray small non-stick skillet with cooking spray. Heat skillet over medium heat. Break egg into skillet. Cook until whites are set. Repeat it with the other remaining eggs.

6 Top with the eggs. Add the salsa, scallions, and hot sauce.
