A quick recipe that’s perfect for busy bees; delicious yet very easy to make. These Meatball Pockets are laced with homemade spices, cheese and meatball mixture and then wrapped in a low carb GET FIT tortilla.

Prep time: 20 minutes | Cook time: 15 minutes
1 Mis-En-Place: 1) Mince garlic 2) Chop onion, shallots, cilantro 3) Grate parmesan cheese
2 In a large bowl, gently combine all ingredients.
3 Preheat oven to 180°C. Wrap tortillas in foil. Place in oven for 10 minutes or until warmed through and soft.
4 Form warm tortilla into cones and fold bases under, then fill each with a meatball mixture.
5 Brush top edge with egg; press onto packet to seal. Seal with a toothpick to secure that the mixture doesn't spill over during baking.
6 Place, seam-sides down, on baking sheet; brush with remaining oil.
7 Broil until golden and firm, 7 to 10 minutes. Or fry in oil until deeply browned all over.
