Bake GET FIT Roti to create a delicious crunchy low carb tostadas. Then top them with guacamole, healthy colorful grilled veggies and Cotija ( Cotija is a crumbly Mexican-style cheese that adds a nice salty note OR you can also substitute feta).
Prep time: 10 minutes | Cook time: 15 minutes
1) Cut broccoli into florets.
2) Freshly powder black pepper
3) Halve and seed the red bell pepper
4) Quarter zucchini lengthwise
5) Cut red onion into 1/4 -inch rings
6) Crumble cheese
7) Chop cilantro
8) Thinly slice radish (optional)
9) Cut lemon cut into 8 wedges
2 Preheat oven to 400 F.
3 Preheat grill.
4 Place GET FIT Rotis directly on oven rack. Bake 10-12 minutes or until crisp. Transfer them to a cooling rack.
5 Place broccoli in a medium bowl. Drizzle with oil, tossing to coat; season with salt and pepper. Brush bell pepper, zucchini, corn and onion with oil; season with salt and pepper.
6 Place broccoli in a grill basket and corn directly on grill. Grill 10-12 minutes, or until tender, turning to cook evenly.
7 Add bell pepper, zucchini, and onion to grill. Grill 8-10 minutes on each side or until tender.
8 Remove vegetables from grill. Chop bell pepper. Cut zucchini into 2-inch chunks. Cut corn kernels from cob.
9 Place baked GET FIT Rotis on a work surface. Spread evenly with guacamole. Top evenly with grilled vegetables. Garnish with cheese and cilantro. Garnish with radish if desired. Serve with lemon wedges.
1 Broccoli, raw

2 large Red bell or Sweet peppers, raw
2 medium Zucchini
3/4 cup Yellow corn
1 medium Red Onion
2 tbsp Cilantro leaves
1/2 cup, crumbled Feta cheese
2 small purple Radish (optional)
1 cup store-bought or home-made Guacamole
