A true Mexican comfort food, made from leftover tortillas and salsa. Its indeed one of the simplest Mexican breakfast recipe.
Fried tortillas bathed in green or red salsa.
Top it with some cheese, sour cream, avocado, cilantro, fresh onion. You can just fry up eggs too. Super easy and delicious hangover brunch menu.
Prep time: 5 minutes | Cook time: 10 minutes
1 Mis-En-Place: 1) Cut GET FIT Tortilla into triangles (6 triangles each) 2) Crumble Feta Cheese 3) Chop White Onion
2 For GET FIT Chips: Heat a small nonstick skillet over medium heat. Add olive oil and shallow-fry the GET FIT Tortilla triangles. If you do not want to to fry them, you can spray both sides with olive oil and bake at 350F for 4 minutes on each side. Allow it to cool.
3 Wipe the skillet clean and warm the enchilada sauce and ¼ cup water over medium heat.
4 Add the crisped tortillas to the skillet and cook until most of the sauce is absorbed, 5 to 6 minutes. Top with the Feta, onion, and cilantro.
