1 Mis-En-Place: 1) Mince Garlic 2) Grind Black Pepper 3) Grind oregano 4) Cut boneless, skinless chicken breast and thighs into 2 inch pieces 5) Shred mozzarella cheese
2 Preheat oven to 400F.
3 Combine garlic and next 5 ingredients (through paprika). Rub mixture over chicken to coat. Heat a large skillet or grill pan over medium-high heat. Add oil to pan. Add chicken, and cook 4-6 minutes on each side or until done. Remove chicken from pan and let rest 5 minutes. Chop chicken into 1-inch cubes and add to warm marinara sauce.
4 Brush 2 cookie sheets with coconut oil or olive oil. Place GET FIT Rotis' on cookie sheets. Spread evenly with chicken mixture. Top evenly with cheese and green onions. Bake 10 minutes or until cheese is melted and GET FIT Roti is crisp. Cool 5 minutes. Slice and serve.
