1 Mis-En-Place: 1) Shred Cheddar Cheese 2) Thinly slice Bell Peppers 3) Thinly slice Pears 4) Chop Scallions 5) Whish Egg
2 Heat a large nonstick skillet over medium heat. Place 1 GET FIT Roti in skillet and sprinkle one half with 1/3 cup cheese.
3 Add half the sliced bell pepper or Pear, if using. Fold Roti in half.
4 Repeat with remaining Roti and cheese.
5 Cook 2-3 minutes on each side or until lightly browned on both sides.
6 Cut quesadillas into 4 wedges.
